Welsh rarebit muffins

Ingredients

  1. Step 1 225g self-raising flour
  2. Step 2 50g plain flour
  3. Step 3 1 tsp baking powder
  4. Step 4 ½ level tsp bicarbonate of soda
  5. Step 5 ¼ tsp salt
  6. Step 6 ½ level tsp mustard powder
  7. Step 7 100g strong cheese , half grated, half cubed
  8. Step 8 6 tbsp vegetable oil
  9. Step 9 150g Greek yogurt
  10. Step 10 125ml milk
  11. Step 11 1 egg
  12. Step 12 1 tbsp Worcestershire sauce

Directions

  1. Step 1 Heat oven to 200C/fan 180C/gas 6.
  2. Step 2 Mix together the self-raising and plain flour, baking powder, bicarbonate of soda, salt and mustard powder in a bowl.
  3. Step 3 In a separate bowl, mix the cheese, oil, yogurt, milk, egg and Worcestershire sauce.
  4. Step 4 Combine all the ingredients and divide between the muffin cases in the muffin tin.
  5. Step 5 Place in the oven for 20-25 mins until golden. Remove and cool slightly on a rack.
  6. Step 6 What you need: Ask the kids to help get everything ready, weighing scales, measuring jug, fork, 2 mixing bowls, 12 paper muffin cases, muffin tin, cheese grater, sharp knife, tablespoon, cooling rack.
