Tropical smoothie bowl

Ingredients

  1. Step 1 1 small ripe mango , stoned, peeled and cut into chunks
  2. Step 2 200g pineapple , peeled, cored and cut into chunks
  3. Step 3 2 ripe bananas
  4. Step 4 2 tbsp coconut yogurt (not coconut-flavoured yogurt)
  5. Step 5 150ml coconut drinking milk
  6. Step 6 2 passion fruits , halved, seeds scooped out
  7. Step 7 handful blueberries
  8. Step 8 2 tbsp coconut flakes
  9. Step 9 a few mint leaves

Directions

  1. Step 1 Put the mango, pineapple, bananas, yogurt and coconut milk in a blender, and blitz until smooth and thick. Pour into two bowls and decorate with the passion fruit, blueberries, coconut flakes and mint leaves. Will keep in the fridge for 1 day. Add the toppings just before serving.
