Tomato mole
Ingredients
- Step 1 1 ½ tbsp vegetable oil
- Step 2 1white onion , chopped
- Step 3 4 fresh long red chillies , chopped
- Step 4 1 dried ancho chilli , chopped
- Step 5 3 dried cascabel chillies , chopped
- Step 6 1 garlic clove , crushed
- Step 7 340g can sweetcorn , drained
- Step 8 2 large tomatoes , roughly chopped

Directions
- Step 1 Put the oil in a frying pan over a high heat and add the onion, chillies, garlic and sweetcorn. Cook for 5 mins until the onions are soft, then add the tomatoes. Season and stir well. Reduce to a simmer and cook slowly for 20 mins.
- Step 2 Transfer to a small food processor and blend until smooth.
