Tomatillo salsa

Ingredients

  1. Step 1 400g tomatillos
  2. Step 2 small pack coriander
  3. Step 3 1 white onion , chopped
  4. Step 4 2 green chillies , roughly chopped
  5. Step 5 1 garlic clove , roughly chopped
  6. Step 6 1 lime , juiced
  7. Step 7 1 avocado , cut into small cubes

Directions

  1. Step 1 Put the tomatillos in a pan of boiling water, cook for 3 mins or until the skins split, remove with a slotted spoon and cool for 5-10 mins. Blitz in a food processor with the coriander, onion, chilli, garlic and lime. Tip into a bowl, stir in the avocado and season to taste.
