Teriyaki prawns & broccoli noodles

Ingredients

  1. Step 1 50ml low-sodium soy sauce
  2. Step 2 50ml mirin
  3. Step 3 2 tbsp lemon juice
  4. Step 4 1 ½ tbsp caster sugar
  5. Step 5 200g soba noodle
  6. Step 6 140g thin-stemmed broccoli
  7. Step 7 140g cooked prawn
  8. Step 8 1 small red chilli , thinly sliced

Directions

  1. Step 1 In a small saucepan, heat the soy sauce, mirin, lemon juice and sugar. Simmer for 5 mins until syrupy, then remove from the heat. Bring a large saucepan of salted water to the boil, then cook the noodles and broccoli for about 3 mins, adding the prawns a few secs before draining. Divide the mixture between 2 plates, pour the warm teriyaki sauce over the top, sprinkle with the red chilli and serve.
