Spicy chicken nuggets

Ingredients

  1. Step 1 500g chicken thighs
  2. Step 2 150ml natural yogurt
  3. Step 3 3 tbsp tikka masala curry paste
  4. Step 4 100g breadcrumbs
  5. Step 5 50g crispy onions
  6. Step 6 spray oil
  7. Step 7 100g mayonnaise
  8. Step 8 1 lime , zested and cut into wedges to serve
  9. Step 9 2 tbsp mango chutney

Directions

  1. Step 1 Cut the chicken thighs into nugget sized pieces then put in a bowl with the yogurt and curry paste. Cover and leave in the fridge to marinate for 2 hrs.
  2. Step 2 Heat the oven to 200C/180C fan/gas 6. In a baking dish mix together the breadcrumbs and dried onions. Turn the marinated chicken pieces in the breadcrumb mix then put on a baking tray and spray each nugget with the oil (this will help them to get crispy). Roast for 25 mins.
  3. Step 3 Meanwhile mix the mayonnaise with the lime zest and swirl in the mango chutney. Serve the nuggets with the mayo and lime wedges for squeezing.
