Rum 'n' raisin ice cream sandwich

Ingredients

  1. Step 1 2 tbsp raisins
  2. Step 2 30ml dark rum
  3. Step 3 2 scoops vanilla ice cream , softened
  4. Step 4 4 oat and raisin cookies

Directions

  1. Step 1 In a small saucepan, warm the raisins in the rum for a few mins. Set aside to cool for 15 mins, then mix with the ice cream. Freeze for a few hours, or until solid.
  2. Step 2 Divide the ice cream between 2 cookies, then top with the other cookies.
