Ingredients

  1. Step 1 280g jar artichokes in oil
  2. Step 2 2 onions , finely sliced
  3. Step 3 3 garlic cloves , finely sliced
  4. Step 4 150ml passata
  5. Step 5 splash white wine (optional)
  6. Step 6 140g frozen pea
  7. Step 7 140g frozen broad bean
  8. Step 8 handful parsley , chopped

Directions

  1. Step 1 Heat a large frying pan with 3 tbsp of the artichoke oil. Fry the onions and garlic until soft and golden, about 15 mins. Pour in the passata and wine (if using). Cook for around 5 mins until thickened.
  2. Step 2 Drain the artichokes and tip in with the peas and broad beans. Gently cook for 5 mins. Pop into a serving bowl, scatter with parsley and drizzle with a little extra artichoke oil, if you like.
