Quick pickled cucumbers

Ingredients

  1. Step 1 1 large cucumber, ends trimmed, cut in half widthways and spiralized into thick ribbons
  2. Step 2 1 tsp flaky sea salt
  3. Step 3 1 tbsp white wine vinegar
  4. Step 4 1 tbsp caster sugar
  5. Step 5 ½ tsp coriander seeds
  6. Step 6 a small handful of dill, leaves picked

Directions

  1. Step 1 Toss the cucumber ribbons with the salt in a colander. Leave for 15 mins then squeeze out any excess moisture with your hands and pat the ribbons dry with a tea towel.
  2. Step 2 Mix the other ingredients together in a small bowl then stir in the cucumber.
