Peel and wash onions, potatoes, beans and peppers. We cut the onions finely and place them on the bottom of the pot.

Cut the potatoes into "slices" and spread them evenly over the onion layer.Fill 1/4 cup with olive oil, add: 4 heaped teaspoons of marjoram, 1-2 teaspoons of lovage, wild garlic, slightly less salt, hot paprika and turmeric. Fill up the glass with water, mix and then pour the resulting emulsion on the onion and potatoes. Stew under cover for about 10 minutes. In the so-called in the meantime, wash and cut in half the beans, peppers (cut into larger cubes), garlic (pass through the press). After 10 minutes, add the beans to the stewing vegetables, after another 10 minutes, peppers and garlic. Stew until potatoes and beans reach the desired degree of softness. I really like al dente vegetables so I don't wait for everything to be boiled down. :-)During the stewing of vegetables, we can add a little water, and just before the end chopped parsley.Bon Appetit!
