Peach & blue cheese salad

Ingredients

  1. Step 1 ½ ciabatta loaf, sliced
  2. Step 2 2 tbsp olive oil
  3. Step 3 1 tsp clear honey
  4. Step 4 squeeze of lemon juice
  5. Step 5 1 bag of mixed salad leaves
  6. Step 6 handful of mint leaves, torn
  7. Step 7 4 peaches , each cut into 8 pieces
  8. Step 8 140g blue cheese or Brie, cut into chunks
  9. Step 9 100g sugar snap peas , sliced in half lengthways

Directions

  1. Step 1 Toast the ciabatta slices and drizzle with 1 tbsp oil. Make the dressing by whisking together the remaining oil, honey and lemon juice, then season to taste. Mix all of the other ingredients together in a large bowl and toss with the dressing before serving.
