No-cook prawn coleslaw

Ingredients

  1. Step 1 1⁄2 head white cabbage , finely shredded
  2. Step 2 1 large carrot , coarsely grated
  3. Step 3 100g radish , sliced
  4. Step 4 2 large handfuls beansprouts
  5. Step 5 handful cashew nuts
  6. Step 6 handful coriander leaves
  7. Step 7 100g cooked prawn
  8. Step 8 zest and juice 1 lime
  9. Step 9 2 tsp sugar
  10. Step 10 1 tbsp sesame oil
  11. Step 11 1 red chilli , deseeded and chopped (optional)
  12. Step 12 small knob fresh root ginger , finely shredded
No-cook prawn coleslaw

Directions

  1. Step 1 Mix all the dressing ingredients together in a large bowl, then stir in all of the other ingredients except for the prawns. Pile the salad onto two plates, then top with a handful of prawns.
