No-cook prawn coleslaw
Ingredients
- Step 1 1⁄2 head white cabbage , finely shredded
- Step 2 1 large carrot , coarsely grated
- Step 3 100g radish , sliced
- Step 4 2 large handfuls beansprouts
- Step 5 handful cashew nuts
- Step 6 handful coriander leaves
- Step 7 100g cooked prawn
- Step 8 zest and juice 1 lime
- Step 9 2 tsp sugar
- Step 10 1 tbsp sesame oil
- Step 11 1 red chilli , deseeded and chopped (optional)
- Step 12 small knob fresh root ginger , finely shredded

Directions
- Step 1 Mix all the dressing ingredients together in a large bowl, then stir in all of the other ingredients except for the prawns. Pile the salad onto two plates, then top with a handful of prawns.
