Mexican rice & bean salad

Ingredients

  1. Step 1 175g/6oz basmati and wild rice
  2. Step 2 400g can mixed bean salad , drained and rinsed
  3. Step 3 bunch spring onions , chopped
  4. Step 4 1 red pepper , deseeded and chopped
  5. Step 5 1 avocado , chopped
  6. Step 6 juice 1 lime , plus wedges to serve
  7. Step 7 1 tbsp Cajun spice mix
  8. Step 8 small bunch coriander , chopped

Directions

  1. Step 1 Cook the rice following pack instructions. Drain, then cool under cold running water until completely cold. Stir in beans, onions, pepper and avocado.
  2. Step 2 Mix the lime juice with the Cajun spice mix and some black pepper. Pour over the rice mix, stir in the coriander and serve with extra lime wedges.
