Mediterranean Baked Pork Tenderloin

Preheat oven to 375 degrees F.

In a small bowl combine the coriander, cumin, cinnamon, allspice, cloves, oregano and cayenne pepper and stir. Set aside.

Place pork tenderloin on a large cutting board. Trim the pork tenderloin by removing any silver skin.

Cut 3 slits into each pork tenderloin using a sharp knife and insert the small piece of chopped garlic into each slit, making sure to push the garlic into the slit.

Using your hands rub the Mediterranean spice mixture over each pork tenderloin on both sides.

Sprinkle lightly with salt and pepper on all sides.

Put the pork tenderloin in a large baking dish

Bake the tenderloin at 375 degrees F for 30-35 minutes, or until the meat thermometer registers 145 degrees F at the thickest part of the pork {there should be a blush of pink in the pork}.

Remove from the oven and allow to rest for 2-3 minutes. Slice the pork tenderloin in thin cuts and serve with fresh parsley.
