Directions
-
1
Spray two 8- or 9-inch round baking pans with cooking spray.
-
2
Whisk together confectioners sugar, milk, butter, and vanilla.
-
3
Add 3 1/2 cups flour to a large mixing bowl. Set aside. In a medium saucepan, scald the milk by heating it over medium heat until foam forms around the edges but milk does not reach a boil.Turn off heat and add butter, sugar, potatoes, and salt. Stir to combine and let cool until lukewarm.
-
4
Add more milk or confectioners sugar to adjust thickness if needed. Frosting should be thick but very smooth.
-
5
Add yeast, then eggs and stir until thoroughly combined.
-
6
Bake 14-16 minutes, until just slightly golden on top.
-
7
Add milk mixture to the flour mixture and stir until all flour has incorporated. Dough will be very sticky.Cover with plastic wrap and let rise at room temperature for 1 hour.Punch down dough. (Dont be afraid to get your hands messy!)On a very well-floured surface, roll out dough into a large 12x24-inch rectangle, sprinkling with additional flour as needed.
-
8
Remove cinnamon rolls from oven and spread with frosting immediately.
-
9
Spread softened butter evenly over the entire surface of the dough.
-
10
Let cool slightly, at least 10 minutes, before serving. This allows the rolls to hold their shape a bit better when serving, and also allows the frosting to soak into the rolls more.
-
11
Sprinkle brown sugar over the butter and gently spread into an even layer.
-
12
Serve and enjoy!
-
13
Sprinkle cinnamon over the brown sugar. Beginning from the long side furthest away from you, roll dough toward you, forming a tight log. Using a very sharp knife, slice into 1 1/2-inch sections (I use 3 fingers as a width guide). Arrange rolls in prepared cake pans and cover with plastic wrap or tea towels.
