Preheat the oven to 400F (200C).

Place the salmon on a small baking sheet lined with a silicone mat or parchment paper. If you line it with kitchen foil you'll need some non stick spray as well.

In a small bowl, mix together the soy sauce, lime juice, and low carb honey.

Spread the mixture over the salmon fillets, then season with salt and pepper.

Roast for 10-15 minutes (depending on thickness and how well done you like your fish).

Meanwhile, cook the cauliflower rice according to the pack instructions, unless making from scratch. When it is cooked, drain (if necessary) and place in a bowl.

Add the cilantro, red pepper flakes, salt, and pepper.

Stir well then transfer to a serving platter. When the salmon is cooked, place the salmon over the cauli rice and garnish with cilantro.
