Directions
-
1
Preheat the oven to 375 degrees.
-
2
In a large bowl, whisk together the flour, salt, sugar, and baking powder.
-
3
Add cold butter. Using two forks or a pastry cutter, work the butter into the flour until the mixture resembles small pebbles.
-
4
In a separate bowl, whisk together the egg, yogurt, vanilla, lemon zest, and juice.
-
5
Add wet ingredients to dry ingredients, and mix just until combined.
-
6
Fold chopped strawberries.
-
7
Brush the tops of the scones with melted butter and sprinkle with sugar.
-
8
Will floured hands, press the dough onto a baking mat and form a large circle. Carefully not to work the dough too much with your hands as the warmth from your fingers will soften the butter.
-
9
Carefully cut the scones into wedges with a knife or a pizza cutter that has been dipped in flour.
-
10
Bake the scones for 20 minutes or until golden brown. Allow them to cool completely.
-
11
To make the glaze, whisk together the powdered sugar, lemon juice and butter until smooth.
-
12
Drizzle the glaze over the cooled scones.
