Directions
-
1
To make the cheese sauce for the dehydrated potatoes, saute 1/4 cup shallots in a saucepan.
-
2
When the shallots are translucent, add 1/4 cup butter and melt.
-
3
Add 3-4 Tablespoons of flour and stir well. This will form a roux.
-
4
Add a bit more flour if it is too thin. Cook the roux until it browns to your liking.
-
5
Add 1 cup cold milk in small amounts at a time. This will start to bubble and make a sauce. You may need a bit more milk depending on how thick you like your sauce.
-
6
Add 1/2 cup of the cheddar cheese and melt. Some people like a pinch of nutmeg to bring the flavor out.
-
7
Add salt and pepper if you wish.
-
8
Grease a baking pan and layer the sauce alternately with the dehydrated potatoes.
-
9
Add some cheese to the top, cover, and bake at 350°F for 20-25 minutes.
-
10
Uncover and bake another 5-10 minutes, or until the cheese is bubbly and brown.
-
11
Serve hot.
