Irish Mashed Potatoes Colcannon

Put the potatoes in a pot and fill with cold water an inch above the potatoes.

Add a tablespoon of salt and bring the water to boil.

Cook the potatoes for 15 or 20 minutes, until they are easily pierced with a fork, then drain well in a colander.

Place the cabbage and onion into the pot the potatoes cooked in.

Add 1/2 cup water. Bring the water to a boil, then reduce the heat to low and cover the pot.

Simmer for 8 minutes until the cabbage and onion are tender but not mushy.

Drain the cabbage and onion, then add the potatoes into the pot with them.

Add milk and melted butter to the pot.

Use a potato masher or wooden spoon to stir together and mash the potatoes.

Once well mixed and heated through, season with salt and pepper to taste.
