    Heat the vegetable oil in a large skillet over medium heat, and when it's hot, saut the onion and garlic until fragrant about 2minutes. Stir frequently to prevent sticking and burning.

    Add the ground beef and taco seasoning and saut, breaking up chunks with a wooden spoon, until cooked through. Season with salt and pepper to taste, then drain off and discard excess fat and set beef aside to cool slightly.

    Place a layer of shredded lettuce on a large plate, then place a generous scoop of seasoned ground beef in the center.Working from the inside out, add a layer each of tortilla chips, cherry tomatoes, pickled jalapeos, black beans and half a tablespoonof scallions.
