We used our propane grill for this recipe. You could easily use an off-set smoker and enjoy some smokey flavor in each bite.On a veggie tray specifically for a grill, grill the mushrooms, sliced bell pepper, diced pablano peppers, two halves of jalapeno.Lightly coat shrimp with your favorite herb mixture, we used Mrs. Dash. Then place shrimp on skewers, and grill for 2-4 minutes on each side, until pink and 145 degrees Fahrenheit.Assemble your quesadilla how you like, we placed spinach leaves down, then topped with grilled veggies, scallions, diced jalapeno, shrimp, and cheese, top second tortilla on top.This is the tricky part, with a very large spatula, or two large spatulas, place quesadilla on grill for about 4 minutes, or until cheese is melting and tortilla is crisp. Then extra careful, put a plate on top of quesadilla, place a spatula under quesadilla and flip onto plate, then slide uncooked portion onto grill and grill for another 4 minutes or so, until tortilla is crisp and cheese is melted.Top with salsa, or guacamole, or plain Greek yogurt....or all three! Enjoy!
