Grilled salmon tacos with chipotle lime yogurt

Ingredients

  1. Step 1 1 tsp garlic salt
  2. Step 2 2 tbsp smoked paprika
  3. Step 3 good pinch of sugar
  4. Step 4 500g salmon fillet
  5. Step 5 200ml fat-free yogurt
  6. Step 6 1 tbsp chipotle paste or hot chilli sauce
  7. Step 7 juice 1 lime
  8. Step 8 8 small soft flour tortillas , warmed
  9. Step 9 ¼ small green cabbage , finely shredded
  10. Step 10 small bunch coriander , picked into sprigs
  11. Step 11 few pickled jalapeno chillies , sliced
  12. Step 12 lime wedges, to serve
  13. Step 13 hot chilli sauce to serve, (optional)

Directions

  1. Step 1 Rub the garlic salt, paprika, sugar and some seasoning into the flesh of the salmon fillet. Heat grill to high.
  2. Step 2 Mix the yogurt, chipotle paste or hot sauce and lime juice together in a bowl with some seasoning, and set aside. Place the salmon on a baking tray lined with foil and grill, skin-side down, for 7-8 mins until cooked through. Remove from the grill and carefully peel off and discard the skin.
  3. Step 3 Flake the salmon into large chunks and serve with the warmed tortillas, chipotle yogurt, shredded cabbage, coriander, jalapeños and lime wedges. Add a shake of hot sauce, if you like it spicy.
