Gingerbread bites

Ingredients

  1. Step 1 330g pitted dates
  2. Step 2 2 tsp vanilla extract
  3. Step 3 80g ground almonds , plus extra if needed
  4. Step 4 ½ tsp cinnamon
  5. Step 5 ½ tsp ground ginger
  6. Step 6 80g flaked almonds
  7. Step 7 80g pecans , roughly chopped

Directions

  1. Step 1 Blend the dates and vanilla extract using a food processor or stick blender with 2 tbsp water. Add the ground almonds and spices and pulse until combined. You may need to add extra ground almonds, 1 tsp at a time, to firm them up.
  2. Step 2 Fold through the flaked almonds and pecans. Empty onto a greased baking tray and press until flat and even. Chill in the fridge until set.
  3. Step 3 Turn out onto a chopping board and cut into bite-sized pieces.
