Gherkin ketchup

Ingredients

  1. Step 1 200g gherkins from a jar, sliced
  2. Step 2 250ml gherkin pickle liquor
  3. Step 3 25g caster sugar

Directions

  1. Step 1 Tip all the ingredients into a pan. Bring to the boil and simmer for 10-15 mins until almost all of the liquid has evaporated. Pour the gherkins into a blender and purée until smooth. Then pass through a fine sieve and chill in the fridge. Can be made up to five days ahead, just give it a stir before serving. Best served at room temperature.
