Fruity mincemeat with almonds

Ingredients

  1. Step 1 4 Bramley apples , peeled, cored and grated
  2. Step 2 350g light muscovado sugar
  3. Step 3 zest and juice 1 orange
  4. Step 4 zest and juice 1 lemon
  5. Step 5 1 tsp ground cinnamon
  6. Step 6 ¼ tsp ground nutmeg
  7. Step 7 ¼ tsp ground cloves
  8. Step 8 ¼ tsp allspice
  9. Step 9 100g dried cranberries
  10. Step 10 100g sultanas
  11. Step 11 100g raisins
  12. Step 12 100g currants
  13. Step 13 100ml brandy
  14. Step 14 85g flaked almond
  15. Step 15 100g shredded suet or light shredded vegetable suet

Directions

  1. Step 1 Put the grated apple and any juices, sugar, and orange and lemon zests and juices into a large saucepan. Bring gently to a simmer, stirring until the sugar has melted. Turn off the heat and stir in the spices, dried fruit and brandy. Set aside until cool.
  2. Step 2 Once cool, stir in the almonds and suet. Divide between sterilised jars or plastic containers for the freezer. Will keep unopened in the fridge for up to 3 months, or freeze for up to 6 months.
