If using the homemade taco seasoning above, just stir the spices together to combine and set aside

Heat 2 tablespoons of oil in a medium-sized skillet over medium heat

Add onions, and if you're using a fresh chili pepper, add that now too. Saut for about 3-4 minutes until tender

Next add your ground beef or turkey to the skillet along with 1 1/2 tablespoons of taco seasoning (see seasoning ingredients above, or use your own pre-made favorite) Cook just until meat is cooked through.Next add 1 1/2 tablespoons of tomato paste. And, if you're using canned chilis instead of fresh, now's the time to add those to the skillet. Simmer everything together just a few minutes and remove from heat

Spoon hot mixuture into warm fully-baked potato. Top with salsa, olives, guacamole, or any other fixings you like.
