Crunchy watercress, cucumber & radish salad

Ingredients

  1. Step 1 1 cucumber
  2. Step 2 2x bags watercress
  3. Step 3 2x bags baby radishes , halved if large
  4. Step 4 6 tbsp natural yogurt
  5. Step 5 1 tbsp white wine vinegar
  6. Step 6 1 tsp Dijon mustard
  7. Step 7 1 garlic clove , crushed
  8. Step 8 sprig dill , leaves only, chopped

Directions

  1. Step 1 To make the dressing, whisk together all the ingredients, then season. (This can be stored in the fridge for up to 2 days.) Peel the cucumber into long, thin strips with a vegetable peeler, discarding the seeded section. Just before leaving, arrange the watercress, cucumber and radishes in a portable container. Drizzle with dressing just before serving.
