Country apple cake
Ingredients
- Step 1 5 medium eggs
- Step 2 200g granulated sugar
- Step 3 100ml vegetable oil
- Step 4 175g plain flour
- Step 5 2 tbsp cocoa powder
- Step 6 1 tsp baking powder
- Step 7 ½ tsp cinnamon
- Step 8 ½ tsp mixed spice
- Step 9 ½ tsp ground ginger
- Step 10 5 eating apples , peeled, cored and diced, about 600g
- Step 11 1 tsp each icing sugar and ground cinnamon, for dusting

Directions
- Step 1 Heat oven to 180C/160C fan/gas 4. Line a 23cm loose-bottomed cake tin with baking parchment. In a large bowl, beat together the eggs and sugar until thick and pale, about 5 mins. Pour in the oil and stir well to combine.
- Step 2 Sieve in the dry ingredients and fold through until the mixture is smooth and well combined before adding the apples.
- Step 3 Carefully pour the mixture into the tin and bake for 45-50 mins. Leave to cool slightly before turning out onto a cooling rack. Once the cake is cool, dust with icing sugar and cinnamon.
