Country apple cake

Ingredients

  1. Step 1 5 medium eggs
  2. Step 2 200g granulated sugar
  3. Step 3 100ml vegetable oil
  4. Step 4 175g plain flour
  5. Step 5 2 tbsp cocoa powder
  6. Step 6 1 tsp baking powder
  7. Step 7 ½ tsp cinnamon
  8. Step 8 ½ tsp mixed spice
  9. Step 9 ½ tsp ground ginger
  10. Step 10 5 eating apples , peeled, cored and diced, about 600g
  11. Step 11 1 tsp each icing sugar and ground cinnamon, for dusting

Directions

  1. Step 1 Heat oven to 180C/160C fan/gas 4. Line a 23cm loose-bottomed cake tin with baking parchment. In a large bowl, beat together the eggs and sugar until thick and pale, about 5 mins. Pour in the oil and stir well to combine.
  2. Step 2 Sieve in the dry ingredients and fold through until the mixture is smooth and well combined before adding the apples.
  3. Step 3 Carefully pour the mixture into the tin and bake for 45-50 mins. Leave to cool slightly before turning out onto a cooling rack. Once the cake is cool, dust with icing sugar and cinnamon.
