Classic guacamole

Ingredients

  1. Step 1 1⁄4 red onion
  2. Step 2 2 ripe tomatoes
  3. Step 3 a few coriander sprigs
  4. Step 4 2 green jalapeños
  5. Step 5 2 ripe avocados , halved
  6. Step 6 1 lime , juiced
  7. Step 7 tortilla chips , to serve

Directions

  1. Step 1 Finely chop the red onion, tomatoes, coriander and jalapeños separately. Mix together the onion, tomatoes, coriander and a pinch of salt. Keep the jalapeños to one side.
  2. Step 2 Scoop all the avocado flesh into a bowl and crush with a fork, leaving it chunky - it should not be puréed. Add the lime juice and onion mixture, combining gently.
  3. Step 3 Add jalapeños, to taste, and more sea salt if needed. Serve with the tortilla chips.
