    1Wash zucchini and tomatoes. Halve zucchini lengthwise, then slice crosswise into half rounds. Medium dice tomatoes. Peel and small dice onion. Peel and mince garlic.1 medium zucchini squash

    Heat a sauté pan over medium-high heat.

    3In a small saucepan, bring broth to a boil.

    Add chicken and cook until lightly browned but not cooked through, 1-2 minutes per side.

    Add tomatoes, honey, cinnamon, cumin, salt, and pepper. Stir to combine and bring to a boil. Reduce heat, cover, and cook until chicken is cooked through and zucchini is tender, 8-10 minutes.1 tsp honey

    7Wash and dry cilantro. Shave leaves off the stems; discard the stems and mince the leaves.
