Chargrilled veg hummus with dippers

Ingredients

  1. Step 1 350g frozen chargrilled vegetables , defrosted
  2. Step 2 400g can chickpeas , drained
  3. Step 3 1 garlic clove , chopped
  4. Step 4 juice ½ lemon
  5. Step 5 1 tsp olive oil
  6. Step 6 2 wholemeal pitta breads , toasted and sliced
  7. Step 7 100g radishes , scrubbed
  8. Step 8 2 carrots , cut into batons
  9. Step 9 3 celery sticks, cut into batons

Directions

  1. Step 1 Tip the vegetables, most of the chickpeas, garlic and lemon juice into the bowl of a food processor with some seasoning, then whizz until smooth.
  2. Step 2 Put the hummus into a serving bowl. Scatter over the reserved chickpeas and the olive oil. Serve with toasted pitta slices and the vegetables to dip in.
