Carrot hummus with pitta dippers

- Step 1 1 large carrot , peeled, cut into chunks and boiled until very tender
- Step 2 1 tub hummus
- Step 3 1 lemon , halved
- Step 4 small bunch coriander (optional)
- Step 5 2 pitta breads or 4 small ones, toasted and sliced

Directions
- Step 1 Grate the cooked carrot - don't worry if it turns to mush, this is what you want.
- Step 2 Tip the hummus into a bowl, add the carrot and mix well.
- Step 3 Add a squeeze of lemon juice, but mind you don't squirt it in your eyes.
- Step 4 Snip the coriander into little pieces using scissors and stir it into the hummus. Serve with the toasted pitta bread.
