Carrot hummus with pitta dippers

Ingredients

  1. Step 1 1 large carrot , peeled, cut into chunks and boiled until very tender
  2. Step 2 1 tub hummus
  3. Step 3 1 lemon , halved
  4. Step 4 small bunch coriander (optional)
  5. Step 5 2 pitta breads or 4 small ones, toasted and sliced

Directions

  1. Step 1 Grate the cooked carrot - don't worry if it turns to mush, this is what you want.
  2. Step 2 Tip the hummus into a bowl, add the carrot and mix well.
  3. Step 3 Add a squeeze of lemon juice, but mind you don't squirt it in your eyes.
  4. Step 4 Snip the coriander into little pieces using scissors and stir it into the hummus. Serve with the toasted pitta bread.
