Combine the goat cheese and cream cheese in a food processor. Process until smooth, then drizzle in the olive oil until smooth. Set aside.

Heat the olive oil in a small saucepan over medium heat.

Add the brussels sprouts and salt, and cook, stirring frequently, until softened (about 6 minutes).

Remove from heat and stir in the balsamic.Butter one side of each piece of bread (optional, but makes for a crispier outside). Flip the bread over, so it's buttered-side down, and spread the whipped goat cheese on each piece of bread. Top with apple slices, cooked brussels sprouts, and sliced brie.Cook the sandwiches in a panini press until golden and melty, or cook in a fry pan until golden (3-5 minutes), flip and cook on the other side until golden.
