Directions
-
1
Preheat the oven to 35
-
2
In a small bowl combine the brown sugar, chili powder, paprika, kosher salt, and black pepper. Rub the chicken pieces all over with the spice mixture.
-
3
Heat a large oven-proof skillet or dutch oven on the stove over medium high heat.
-
4
Add the oil to the pan and swirl to coat.
-
5
Place the chicken pieces in skin-side down. Cook until both sides are browned and skin is crispy.
-
6
Remove the chicken from the skillet and drain the fat.
-
7
Add the onions and carrots to the skillet. Cook for about 5 minutes - the onions will be tender and translucent.
-
8
Add the flour to the pan. I like to sort of tip it sideways and add the flour to whatever liquid is in the pan. Stir.
-
9
Pour in the beer and chicken broth.
-
10
Place the chicken back in the pan and nestle ti down in the liquid between the carrots and onions. Scatter the garlic cloves around the pan.
-
11
Bake for about 40 minutes. Check the chicken to be sure it's cooked through.
-
12
Garnish with the thyme and serve with wild rice or potatoes.
