Heat the oil in a large frying pan over high heat. Cook beef in 4 batches, turning, for 3 mins or until browned all over.

Place the curry paste mixture, beef, coconut milk, coconut cream, star anise, cinnamon, potato and 1 cup (250ml) water in a slow cooker. Cook on high for 6 hours (or on low for 8 hours) or until beef is very tender.Step 4Stir in the sugar, lime juice and fish sauce. Stir in peanuts.Step 5Spoon the curry among serving bowls. Top with coriander and chilli.
