Avocado and sweet Potato Layer Fiesta

Use a springfoam pan, to get oubof pan with least disturbance to the dish.

Place a steamer basket into a medium saucepan. Fill with water to just under the steamer basket.

Mix avocado with lemon juice and salt and mash and mix well.

Add onion, bell pepper, lemon juice, cilantro and salt to a food processor. Pulse all ingredients briefly to a chunky consistency.

Prepare each layer (mashed potatoes, veggie cream, guacamole and salsa) of the ingredients as directed and assemble as per directions below. This is served with a side dish of lentils and salad.

Place potatoes into the steamer basket and cover. Bring water to a boil, then lower heat and simmer potatoes until tender when pierced through with a fork, (about 25 minutes). Time varies depending upon size of the potatoes.

Salsa - Ingredients: ¼ red or yellow onion coarsely chopped ¼ red or yellow bell pepper, coarsely chopped Juice of 1 lemon ½ cup cilantro, chopped (may use parsley) 3 tomatoes (medium), coarsely chopped ½ teaspoon unrefined salt, or to taste

Add tomatoes and pulse again.

Mashed potatoes - Ingredients: 5 red or yellow potatoes, unpeeled 1 teaspoon onion powder 2 teaspoons unrefined salt, or to taste ½ teaspoon garlic powder ½ cup coconut milk

Drain water and place potatoes into a large mixing bowl.

Adding tomatoes last helps keeps the salsa from being too “soupy”.

Mix in onion and garlic powder, coconut milk and salt. Mash until creamy. Servings: 4 Prep time: 5 minutes Cook Time: 45 minutes to 1 hour

Assemble - Directions: To assemble the layers, place mashed potato into a springform mold or a casserole dish and press down firmly with serving utensil.

Veggie Cream - Ingredients: 2 cups sunflower seeds, soaked overnight and rinsed 1 small clove garlic 1 tablespoon fresh red onion ½ red bell pepper (seeds removed) 1 cup water 1 tablespoon lemon juice ½-1 teaspoon unrefined salt, or to taste Veggie Cream - Directions: Blend until smooth.

Add a layer of veggie cream, then a layer of guacamole, and top with salsa.

Guacamole - Ingredients: 3 avocados 1 tablespoon lemon juice ½ - 1 teaspoon unrefined salt, or to taste
