Add the diced apples to a medium saucepan. Fill with water and place over medium high heat. Bring to a boil, lower heat to medium and let apples simmer until tender, about 15 minutes.

Drain water.

Preheat oven to 170 degrees F. Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.

Add cooked apples, pumpkin puree, cinnamon, and honey to a high powered blender. Blend until smooth and combined.

Pour the mixture onto the baking sheet, leaving some room around the edges. Use a knife or an offset spatula and spread so that the mixture is in an even layer.

Bake for about 4-5 hours or until the fruit is dried and is only slightly tacky to the touch.

Remove from the oven.

Let cool for a few minutes and then peel the leather off the baking mat and cut into desired shapes and sizes. I usually get about 10 rolls.

Roll the each piece in parchment paper and store in an airtight container for up to one week.
